INGREDIENTS--------------------------------------------------
5 chicken legs (skin removed)
4 chicken thighs (skin removed) cut in two (optional)
5 large Roma Tomatoes
3/4 large onion (divided)
2 Jalapenos (seeds removed) Optional
1/2 Orange Bell Pepper (diced)
3 large Garlic cloves finely minced
3 large whole Allspice
2 tsp white clear vinegar
1 tsp Mexican Oregano
2 large Bay leaves
1 tsp whole Cumin
1/4 C. rough chopped cilantro (forgot to add)
1 1/2 C. Water (for blender)
Salt as needed
Pepper as needed
MEXICAN RICE------------------------------------
1 1/2 Tbsp canola oil
1 C. jasmine rice (rinsed well)
1 3/4 C. water
1 Tbsp tomato flavored Chicken Bouillon
(piece of onion and garlic clove to flavor oil) optional

We love cooking outdoors as well but here in NC we have the mosquitoes. They can be brutal especially after being hit with Hurricane Helene and all the standing water.

Rachel you are sweet as a bug! I love watching your videos. They just meals me smile. I recently went to visit a dear friend in Ireland. I brought things with me to make him some chicken green chile cheese tamales and Mexican rice. Masa and dried ground chiles are impossible to find there so I brought it all with me. I made the green sauce here and canned it them mailed it to him so We could have our special dinner. I made some enchiladas too! I used your enchilada sauce recipe and I linked him your recipe so he could make it after I left😍. I left him some wonderful red chili powder that I use here too.
